Grand Floridian’s Gingerbread Dough Recipe

Gingerbread Dough

Recipe Yields 5 ½ Lbs (30 each 3 0z cookies)

For the Honey Dough
Ingredients:
# 2¼ Lbs Honey
# 1¾ Lbs High Gluten Flour

For the Gingerbread Dough
Ingredients:
# 3¾ Lbs Honey Dough
# 1½ Lbs High Gluten Flour
# 1½ Each Eggs, Fresh
# 6 Ounces Simple Syrup
# 1½ Ounces Lebkuchen Spice
# 2 Ounces Warm Water

For the Method:
1. To make the honey dough, bring the honey to a boil and then pour into a mixing bowl.

2. Mix the warm honey with a dough hook slowly then add the high gluten flour and mix for 15 minutes until smooth.

3. Once the dough is smooth, pour into a plastic bag.

4. To make the Gingerbread dough by mixing together the flour, spice, simple syrup and eggs. Set aside for the next step.

5. Add the warm water to the Gingerbread dough mixture. Mix well

6. Cut the Honey Dough into 1 to 2 Pound portions and add into Gingerbread dough and mix well.

7. Once you have mixed both dough’s together, with a rolling pin and a bit of flour, roll out the dough to a ¼ inch thickness and using your favorite Holiday shape cut out the shape and place on a cookie sheet (which has been sprayed with non-stick cooking spray)

8. Continue this until you have finished all of the dough

9. Pre-heat your oven to 325 Degrees. Then place the cookie sheets with Gingerbread shapes into the oven and cook for about 10 minutes.

10. When done, take out of the oven and let the cookies cool to room temperature and Enjoy!
